Sweet and Spicy Beet Spread

Ingredients

  • 80 ml (⅓ cup) olive oil
  • 2 Tablespoons honey, or sugar
  • 1 lemon, zested and juiced
  • 60 ml (¼ cup) tahini
  • 60 ml (¼ cup) white vinegar
  • 425 g (15 ounces) tinned garbanzo beans, rinsed, drained
  • 215 g (1 cup) beetroot, cooked
  • 1 garlic clove, peeled
  • 1 jalapeño, seeded, quartered
  • ¼ teaspoon sea salt
  • ¼ teaspoon ground black pepper

Directions

  1. Add all ingredients to the Vitamix container in the order listed and secure the lid.
  2. Select Variable 1 or the Dips + Spreads program.
  3. Start the machine, slowly increase to its highest speed, and blend for 1 minutes; or start the machines and allow the Dips + Spreads program to complete.
