Pomegranate Poached Pears with Chocolate and Raspberry Sauce

A gorgeous medley of sweet and tart fruit flavours—even the chocolate sauce has blueberries and pitted dates.

Poached Pears

Ingredients

  • 6 pears
  • 480 ml (2 cups) pomegranate juice
  • 1 cinnamon stick
  • 6 whole cloves
  • 2 Tablespoons goji berries

Directions

  1. Peel the pears, leaving stems intact, and slice a little off the bottom of each pear so that they stand up.
  2. In a large sauce pan, place pears standing up snugly together.
  3. Pour in pomegranate juice or wine.
  4. Add cinnamon, cloves, and Goji berries.
  5. Gently simmer, covered, for about 20 minutes until pears are tender.
  6. Remove pears and refrigerate until ready to serve.
  7. Reduce poaching liquid until it thickens and becomes syrupy. Remove from heat.

Raspberry Sauce

Ingredients

  • 285 g (10 ounces) frozen raspberries

Directions

  1. Place raspberries into the Vitamix container and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 45 seconds or until very smooth.
  5. Mix into reserved poaching liquid.

Chocolate Sauce

Ingredients

  • 360 ml (1½ cup) soy milk
  • ½ teaspoon vanilla essence
  • 150 g (1 cup) dates, pitted
  • 90 g (⅔ cup) raw macadamia nuts
  • 1 Tablespoon unsweetened cocoa powder
  • 1 teaspoon ground turmeric
  • 145 g (1 cup) frozen blueberries

Directions

  1. Place soy milk, vanilla, dates, macadamia nuts, cocoa powder, turmeric, and blueberries into the Vitamix container and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 30 seconds or until very smooth and creamy. Add more soy milk if needed.
