Lemon and Chia Dressing

A lemony vinaigrette with blended chia seeds for added nutrition. Perfect for drizzling over a bed of fresh greens.

Ingredients

  • 60 ml (¼ cup) water
  • 2 Tablespoons lemon juice
  • 60 ml (¼ cup) sherry vinegar
  • 120 ml (½ cup) olive oil
  • 2 garlic cloves, peeled
  • ½ shallot, peeled
  • 1 teaspoon Dijon mustard
  • 1 Tablespoon fresh chives, chopped
  • 1 Tablespoon chia seeds

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 30 seconds.
