Jalapeno Tequila Cocktail

This syrup can be stored in the refrigerator for up to a week or frozen in smaller batches for use throughout the year.

Jalapeño Syrup

Ingredients

  • 180 ml (¾ cup) water
  • 150 g (¾ cup) caster sugar
  • 1½ jalapeño, seeded
  • 40 g (1 cup) fresh basil leaves, blanched
  • 20 g (½ cup) fresh coriander leaves, chopped

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to the highest speed.
  4. Blend for 30 seconds. Strain.

Jalepeño Tequila Cocktail

Ingredients

  • 90 ml (4 fluidounces) tequila
  • 45 ml (¼ cup) lime juice
  • 45 ml (¼ cup) jalapeño syrup
  • 260 g (2 cups) ice cubes

Directions

  1. Place all ingredients into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase to the highest speed.
  4. Blend for 30 seconds.
