Herb Aioli

Choose your favourite herbs to create a zesty aioli to use as a dressing, marinade or dip.

Ingredients

  • 2 large pasteurized egg yolks
  • 1 teaspoon Dijon mustard
  • 1 Tablespoon fresh herbs, chopped
  • 1½ Tablespoon lemon juice
  • 180 ml (¾ cup) olive oil
  • salt and pepper, to taste

Directions

  1. Place the egg yolks, mustard, herbs and lemon juice into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 3.
  4. Blend for 8 seconds or until combined.
  5. Remove lid plug and slowly add oil in a thin steady stream. Add salt and pepper and blend for 40 to 45 seconds or until emulsified and smooth.
