BLT Salad

A delicious blend of sweet, salty and fresh citrus flavours.

Ingredients

  • 80 ml (⅓ cup) milk
  • 1 lemon, peeled, halved
  • 1 avocado, halved, pitted, peeled
  • 3 spring onions
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 teaspoon hot sauce
  • 240 ml (1 cup) plain Greek yoghurt
  • 190 g (4 cups) romaine lettuce
  • 4 tomatoes, quartered
  • 225 g (½ pound) bacon, cooked, crumbled
  • croutons, for garnish

Directions

  1. Place milk, lemon, avocado, spring onions, salt, pepper and hot sauce into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 35 to 40 seconds or until ingredients are well blended, using the tamper to press the ingredients into the blades.
  5. Stop machine. Remove lid and scrape the sides of the container.
  6. Add yoghurt and secure lid.
  7. Select Variable 1.
  8. Turn machine on and slowly increase speed to Variable 10, then to High.
  9. Blend for 10 seconds or until ingredients are well blended.

Notes

To serve, arrange salad ingredients on 6 to 8 individual plates or toss in a large salad bowl.&nbsp; Serve with vinaigrette.<br>
